Blueberry Pancakes

Preparation time – 20 mins
Cooking time – 15 mins
Serves – 2

Ingredients:-

  • All purpose, Flour – 1 cup, sieved
  • Sugar – 1 tablespoon
  • Baking powder – 1 teaspoon
  • Salt a pinch
  • Vanilla essence – 1 teaspoon
  • Milk – 1 cup, add more if you desire a thin batter.
  • Eggs – 2 (whites stiffly beaten separately + yolks)
  • Blueberries – ½ cup
  • Sugar, confectioners – 2 tablespoons

Method:

1. In a medium bowl, whisk together egg yolks, vanilla essence and milk. Stir in flour, baking powder and salt.
2. Whisk to form a lump free batter.
3. Preheat a lightly greased waffle iron.
4. Fold in the egg whites and 2/3 of the blueberries into the mixture. Scoop portions of the mixture into the prepared waffle iron, and cook until golden brown.
5. Serve the waffle hot with remaining blue berries and drizzle of honey.
