Tomato Ginger Chicken Soup

Serves: 2

Olive oil- 1 tablespoon
Chicken breast, cut into 1inch cubes- 350 g
Onion, small cubes- ½ cup
Carrots, small cubes- ½ cup
Garlic cubes- 3 cloves
Tomato puree (fresh), seedless and skinned- 1 cup
Ginger, grated- 2 tablespoon
Chicken stock- 3 cups
Sugar- 1 teaspoon

For garnishing
Green onion, chopped


  • Heat a large soup pot over medium heat with olive oil. When hot, add onions, carrots, celery, garlic and ginger.
  • Add chicken pieces and cook for 10 minutes until tender and veggies are beginning to soften.
  • Stir it in the tomato puree, soup seasoning and cook for 2-3 minutes while stirring continuously.
  • Add chicken stock and sugar.
  • Cover and simmer for 15-20 minutes until chicken is cooked properly.
  • Garnish with green onions.
  • Serve hot.
