Tamarind concentrate is a thick, dark paste. The pod of the tamarind tree contains seeds that are covered by a fleshy pulp. It adds a unique fruity sourness to many dishes.  This tamarind concentrate is a concentrated form of tamarind juice (and very convenient to use because it removes the need for mixing & straining)
